Something Special
What is it about having breakfast for dinner that tastes so good? Is it because the flavors are unexpected at that time of day? Or maybe because we feel like we're getting away with eating something we shouldn't? Maybe it's because it's so easy to clean up compared to many dinners? Or perhaps if we've thought ahead and tripled (or quadrupled) the batch of pancakes it's nice knowing that there will be a yummy treat on a school morning, a deviation from the normal cereal and yogurt? I have no idea what it is, maybe a combination of all of these. But tonight, while Kevin was traveling, the kids and I feasted on pancakes, scrambled eggs, bacon, and fresh strawberries & kiwi. Delicious at any time of the day.

I think we appreciate it then because we don't go to all that fuss at breakfast. Remember muffins and scones? For me, especially with Belgian waffles plus scrambled eggs and fruit, the prep can take more than many of my "leftover" meals. I often order breakfast for dinner when we go out, and it is pure comfort food when we travel...
